- 2 egg yolks, slightly beaten
- 2 c. milk
- 2 Tbsp. sugar
- 2 Tbsp. quick cooking tapioca
- 1/4 tsp. salt
- 1 tsp. vanilla
- 2 egg whites
- 1/4 c. sugar
Directions

1Mix egg yolks, milk, 2 tablespoons sugar, tapioca and salt in saucepan.

2Cook over low heat, stirring constantly, until mixture boils.

3Remove from heat; cool.

4Stir in vanilla.

5Beat egg whites until frothy.

6Gradually beat in the 1/4 cup of sugar.

7Continue beating until stiff and glossy.

8Fold into mixture in saucepan. Spoon into dessert dishes.

9Serve with cream or fruit juice.
