- 1/3 c. sugar
- 2 c. milk
- 3 tsp. quick cooking tapioca
- dash of salt
- 1 slightly beaten egg yolk
- 1 tsp. vanilla
- 1 egg white
Directions

1Reserve 2 teaspoons sugar.

2Combine remaining sugar with milk, tapioca and salt.

3Let stand 5 minutes.

4Add egg yolk.

5Bring mixture to a boil over medium heat (mixture will be thin).

6Add vanilla.

7Beat egg white to soft peaks.

8Slowly add reserved 2 teaspoons sugar, beating to stiff peaks.

9Gradually stir into hot mixture.
