- 2 c. skim milk
- 1/4 c. sugar
- 1/4 c. quick cook tapioca
- 2 eggs, separated
- 2 Tbsp. sugar
- 1 tsp. vanilla
Directions

1Combine milk, 1/4 cup sugar, tapioca and egg yolks in a 2-quart dish; blend well.

2Cook on Full power for 6 to 8 minutes, or until mixture begins to boil.

3Stir 2 or 3 times during cooking.

4Beat egg whites until frothy.

5Gradually add sugar. Beat in vanilla.

6Fold into pudding mixture.

7Cool.

8Chill, if desired.
