Ingredients

  • 4 slices stale white bread, crusts removed
  • 4 oz cod roe
  • 1/2 None onion, coarsely chopped
  • 1 clove garlic, crushed
  • 1/4 cup lemon juice
  • 2/3 cup olive oil

Directions

    Soak bread in a bowl of cold water for 2 mins. Squeeze dry and place most of it in food processor bowl. Add roe, onion and garlic and process to a puree, scraping down sides when necessary.

    Add most of lemon juice and process briefly. With motor running, pour in oil through feed tube.

    Taste taramasalata, if too strong in flavor, add remaining squeezed bread and process until smooth. Taste again and add remaining lemon juice if necessary. Add a little cold water if too thick. Add pepper to taste, process again until smooth with a thick, creamy consistency.

    Transfer to a container; cover and refrigerate. Serve with pita bread.
