Ingredients
- 1 chicken (3 to 4 lb.) cut up, skinned and visible fat removed or 3 whole chicken breasts, split, skinned and visible fat removed
- 1 medium onion, peeled and thinly sliced
- 3 to 4 shallots, peeled and cut into thirds (optional)
- 2 Tbsp. vegetable oil
- 1/4 c. dry wine or vermouth
- 1 tsp. dry tarragon
- 1/2 tsp. black pepper
Directions

1Preheat oven to 350°.

2Wash chicken and pat dry.

3Place in a shallow baking pan.

4Sprinkle onion and shallots around and under chicken pieces.

5Pour oil and wine or vermouth over chicken. Sprinkle with tarragon and black pepper.

6Cover baking dish tightly with foil.

7Bake 45 minute.

8Remove foil.
-
9Turn oven to 375°.

10Bake uncovered for additional 15 minutes.
