Tarragon Chicken

Ingredients

  • 1 chicken (3 to 4 lb.) cut up, skinned and visible fat removed or 3 whole chicken breasts, split, skinned and visible fat removed
  • 1 medium onion, peeled and thinly sliced
  • 3 to 4 shallots, peeled and cut into thirds (optional)
  • 2 Tbsp. vegetable oil
  • 1/4 c. dry wine or vermouth
  • 1 tsp. dry tarragon
  • 1/2 tsp. black pepper

Directions

    Preheat oven to 350°.

    Wash chicken and pat dry.

    Place in a shallow baking pan.

    Sprinkle onion and shallots around and under chicken pieces.

    Pour oil and wine or vermouth over chicken. Sprinkle with tarragon and black pepper.

    Cover baking dish tightly with foil.

    Bake 45 minute.

    Remove foil.

    Turn oven to 375°.

    Bake uncovered for additional 15 minutes.
