- 12 medium to large potatoes, peeled and sliced thin
- salt and pepper
- 1 medium onion, chopped fine
- 1/8 tsp. cayenne pepper
- 1/2 tsp. all-purpose seasoning
- 1 stick margarine
- 1/2 lb. cheese spread slices
- 3 to 5 c. milk
- 2 bouillon cubes
Directions

1Cover potatoes with water; salt and pepper to taste.

2Add onion.

3Bring to boil; simmer for 12 to 14 minutes, until tender but not mushy.

4Gently mash into small chunks.

5Add cayenne pepper, all-purpose seasoning, the margarine, cheese, milk and bouillon cubes.

6Bring to a gentle boil, stirring occasionally. Simmer until cheese and margarine melt.

7Recipe can be halved or doubled.
