  • 1-1/2 pound Dried Fruit
  • 1/2 pounds Dark Brown Sugar
  • 3/4 pints Hot Tea
  • 1 pound Self-raising Flour (or Plain Flour With Baking Powder Added)
  • 1 whole Egg, Beaten

Directions

    Mix the dried fruit and sugar together in a large bowl. Pour over the hot tea, stirring to dissolve the sugar. Cover and leave overnight.

    The next day, stir in the flour and the egg. Beat until smooth. Divide between 2 x 2 pound loaf tins.

    Bake at 190 Celsius for 1 - 1.5 hours.

    Cool before serving in slices. Delicious on its own ... or slathered in butter.
