Ingredients

  • 2 (16 oz.) cans refried beans
  • 1/2 to 1 c. salsa
  • 8 oz. container sour cream
  • 1/2 c. mayonnaise
  • 1 pkg. taco seasoning
  • 2 medium size avocados
  • lemon juice, salt and pepper
  • 2 to 3 whole scallions, chopped
  • 1 large tomato, diced
  • 1/2 to 1 c. shredded Cheddar cheese
  • sliced jalapeno peppers
  • 1 small can black olives, sliced (optional)

Directions

    Combine refried beans with enough salsa to be spreadable, but not runny. Spread mixture on a large serving plate with a rim to contain the mix.

    Combine the sour cream, mayonnaise and taco seasoning. Spread on top of the beans.

    Peel, pit and puree avocados.

    Season to taste with lemon juice, salt and pepper (or use prepared guacamole). Spread mixture on top of sour cream layer.

    Sprinkle scallions, tomatoes, cheese, jalapenos and olives (if you like them!) on top of the guacamole.

    Serve with lots of white corn tortilla chips!
