  • 1 (7 oz.) can whole green chilies
  • 2 c. (8 oz.) shredded Monterey Jack cheese with jalapenos
  • 2 c. (8 oz.) shredded Cheddar cheese
  • 3 eggs (large)
  • 3 c. whole milk
  • 1 c. biscuit mix
  • salsa

Directions

    Preheat oven to 325°.

    Spray 11 x 7 x 2-inch baking dish with Pam.

    Split chilies and discard seeds.

    Arrange chilies on bottom of baking dish and top with combined cheeses.

    In a bowl, beat eggs.

    Add milk and biscuit mix.

    Blend well and pour over cheese. Bake at 325° for 50 to 55 minutes or until golden brown at edges. Serve with salsa.
