  • 1/3 c. red wine vinegar
  • 1/4 c. vegetable oil
  • 1/4 c. finely chopped yellow onion
  • 1/2 small fresh or pickled jalapeno pepper with seeds, fine ly chopped (about 1/2 tsp.)
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 3 c. cooked or canned black-eyed peas, rinsed and well drained.

    In a medium-size bowl, whisk the vinegar with the oil.
