- 3 (19 oz.) cans black beans, rinsed and drained
- 1/4 c. olive oil
- 2 Tbsp. lemon juice
- 1 Tbsp. minced jalapeno pepper
- 1/2 c. sliced scallions
- 1/2 tsp. minced garlic
- 1/2 tsp. salt
- 1/2 tsp. ground cumin
- sliced scallions and chopped tomatoes for garnish
Directions

1Put about 2 cups of beans, then oil and lemon juice into a food processor or blender and process until smooth.

2Scrape into a large bowl.

3Stir in remaining beans, the jalapeno pepper, scallions, garlic, salt and cumin.

4Cover and refrigerate at least 2 hours for flavors to blend.

5Garnish with scallions and tomatoes just before serving.
