  • 2 chickens, boiled and boned
  • salt and pepper to taste
  • 1 can cream of chicken soup
  • 1 pkg. corn tortillas, cut into 1/4 pieces
  • 1 c. diced celery
  • 1 c. onion, diced
  • 1 can Ro-Tel
  • 1 lb. Cheddar cheese

Directions

    Salt and pepper chicken to taste.

    In a casserole dish, layer starting with tortillas, chicken, soup and cheese.

    Repeat.

    Freeze for later on or bake at 375° until hot throughout.
