  • 2 c. self-rising corn meal
  • 1/2 tsp. pepper
  • 1 (8 oz.) carton sour cream
  • 1 can cream-style corn
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 3 eggs, well beaten
  • 3/4 c. corn oil
  • 3/4 c. sharp Cheddar cheese, shredded

Directions

    Mix well all ingredients, except for cheese.

    Put 3 tablespoons corn oil in deep iron skillet.

    Heat.

    Sprinkle with corn meal.

    Pour in half the batter.

    Sprinkle with the cheese, then pour in remaining batter.

    Bake at 350° until golden brown.
