- 1 onion
- 4 stalks celery, chopped
- 1 small green pepper, chopped
- 2 Tbsp. vegetable oil
- 1 1/2 lb. lean ground beef
- 1 tsp. chili powder
- 16 oz. can tomatoes
- 1 1/2 c. cooked rice
- salt to taste
- 3/4 c. grated Cheddar cheese
Directions

1Saute the onion, celery and green pepper in the oil until just tender.

2Add the meat and cook until it loses its color.

3Add the chili powder and tomatoes.

4Cook 10 minutes over medium heat. Stir in the rice and salt; warm through.

5Place contents in a baking dish in layers alternating mixture and cheese.

6Sprinkle cheese over top and place in microwave long enough to melt the cheese.
