  • 1 lb. ground beef
  • 1/2 c. diced onions
  • dash of salt and pepper
  • 10 oz. can enchilada sauce
  • 1 can stewed tomatoes
  • 6 to 7 flour tortillas
  • 8 oz. sour cream
  • Monterey Jack or Cheddar cheese
  • Mozzarella cheese

Directions

    Brown ground beef and drain.

    Add enchilada sauce, stewed tomatoes, onions, salt and pepper; bring to a boil and simmer. Spread sour cream on tortillas and fold in half.

    In a 13 x 9-inch baking dish, spread enough sauce to cover bottom of pan.

    Place tortillas on top of meat mixture (sauce) and pour remaining sauce over tortillas.

    Top with cheeses.

    Bake at 350° for 15 minutes.
