Ingredients

  • 2 tablespoons (1/4 stick) unsalted butter
  • 1 cup chopped onion
  • 1 green bell pepper, chopped
  • 3 garlic cloves, chopped
  • 2 6-ounce packages long-grain and wild rice mix (reserve seasoning packets for another use)
  • 1/2 tablespoon chili powder
  • 1 15-ounce can tomato sauce
  • 1/2 cup chopped fresh cilantro
  • 3 cups canned chicken broth, heated

Directions

    Melt butter in heavy large saucepan over medium heat.

    Add onion, bell pepper and garlic and saute until just soft, about 8 minutes.

    Add rice and chili powder and stir until well blended, about 1 minute.

    Mix in tomato sauce and heat through.

    Mix in 1/4 cup cilantro and broth.

    Bring mixture to boil.

    Cover and reduce heat to low.

    Simmer until rice is tender and liquid is absorbed, about 25 minutes.

    Transfer rice to bowl.
