Ingredients
- 2 tablespoons (1/4 stick) unsalted butter
- 1 cup chopped onion
- 1 green bell pepper, chopped
- 3 garlic cloves, chopped
- 2 6-ounce packages long-grain and wild rice mix (reserve seasoning packets for another use)
- 1/2 tablespoon chili powder
- 1 15-ounce can tomato sauce
- 1/2 cup chopped fresh cilantro
- 3 cups canned chicken broth, heated
Directions

1Melt butter in heavy large saucepan over medium heat.

2Add onion, bell pepper and garlic and saute until just soft, about 8 minutes.

3Add rice and chili powder and stir until well blended, about 1 minute.

4Mix in tomato sauce and heat through.

5Mix in 1/4 cup cilantro and broth.

6Bring mixture to boil.

7Cover and reduce heat to low.

8Simmer until rice is tender and liquid is absorbed, about 25 minutes.

9Transfer rice to bowl.

10Garnish with remaining 1/4 cup cilantro and serve.
