- 4 beef eye round steaks cut 1 inch thick or 4
- 1/4 cup dry sherry
- 1 1/2 tablespoons reduced sodium soy sauce
- 1 teaspoon fresh ginger each grated, minced garlic and Oriental
- 1/2 teaspoon red pepper flakes
- 4 ounces udon noodles uncooked, or linguine, 2 c. cooked
- 1/4 cup water
- 2 teaspoons cornstarch
- 1/4 cup chopped fresh cilantro or green onion tops
Directions

1Place beef eye round steaks in plastic bag; add sherry, soy sauce, ginger, garlic, sesame oil and pepper flakes.

2Close bag securely, turning to coat.

3Let stand at room temperature 15 minutes.

4Meanwhile, cook noodles according to package directions; drain well.

5Drain steaks, reserving marinade.

6Pat dry with paper towel.

7Heat nonstick skillet over medium heat.

8Add steaks; pan broil 8 to 10 minutes, to doneness desired (rare to medium), turning once.

9Remove to carving board.

10Pour off drippings from skillet; add reserved marinade.
