Thai Pineapple Fried Rice

  • 1 Pineapple
  • 2 cups Uncooked Rice
  • 3 Tablespoons Oil, Divided
  • 3 Tablespoons Fish Sauce
  • 1 teaspoon Brown Sugar
  • 2 teaspoons Curry Powder
  • 3 cloves Garlic, Minced
  • 1 Red Chili Pepper, Seeds Removed, Minced
  • 2 Shallots, Finely Chopped
  • 1 Egg
  • 1 cup Roasted Cashews (unsalted)
  • 1/2 cups Frozen Peas
  • 1/4 cups Raisins
  • Chopped Green Onion And Coriander, For Garnish

    Cut the pineapple in half lengthwise and scoop it out, making two empty pineapple bowls.

    Cut all the flesh you scooped out into small chunks.

    Set aside.

    Cook rice according to package instructions and let it cool by putting in the fridge or just spreading it out in a large bowl.

    Add 1 tablespoon oil to the rice and toss it well.

    Set aside.

    Combine fish sauce with sugar and curry powder.

    Stir well.

    Set aside.

    Heat remaining 2 tablespoons oil in a wok or a large skillet.

    Add garlic, chili pepper and shallots.

    Stir-fry for a couple of minutes.

    Make a space in the center and crack the egg.

    Stir-fry it to scramble.

    When egg is done, add nuts and the fish sauce-sugar-curry mixture.

    Add the rice, peas, raisins and pineapple chunks.

    Stir-fry for few minutes with a scooping motion.

    Remove from heat and serve in pineapple shells with some coriander and green onion on top!
