  • 2 6 oz. sole fillets
  • 1/4 cup lime juice
  • 2 TBS fish sauce
  • 2 TBS chopped basil
  • 2 TBS chopped mint
  • 2 tsp minced fresh ginger

    In a small bowl combine lime juice, fish sauce, chopped basil, chopped mint and ginger. Pour mixture over fish and turn to coat. Let marinate 10 minutes. On medium-high heat, fry fish in a nonstick pan, about 3 minutes on each side. To easily remove the fish from the pan, slide the fish from the pan onto a plate.
