The Bricks Pancakes

Ingredients
- 4 c. buttermilk
- 4 c. old-fashioned oats
- 4 eggs
- 1/2 c. melted butter
- 1 c. flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 2 tsp. sugar
- 1/2 tsp. cinnamon or more to taste
- 1/2 tsp. salt (optional)
Directions

1Combine oats and buttermilk and refrigerate overnight.

2Add slightly beaten eggs and melted butter to mixture.

3In a medium bowl, combine flour, soda, baking powder, sugar, cinnamon and salt. Add buttermilk mixture, stirring enough to barely moisten dry ingredients.

4For each pancake, drop 1/2 cup batter onto lightly greased griddle.

5Cook until surface is bubbly and edges are slightly dry, then turn and cook other side.

6This recipe makes about 26 pancakes.

7Reduce ingredients by half for smaller family.
