- 1 envelope Lipton onion soup mix
- 2 lb. all-purpose potatoes, cut into large chunks (leave peelings; I use red potatoes for this, it's great!)
- 1/3 c. olive or vegetable oil
Directions

1Preheat oven to 450°.

2In large bag, add all ingredients. Shake until evenly coated.

3Place potatoes in shallow baking or roasting pan.

4Bake, stirring occasionally, 40 minutes or until tender and golden brown.

5Garnish if desired with parsley flakes. Makes 8 servings.
