  • 4 poached eggs
  • 2 tbsp fat-free refried beans
  • 2 medium corn tortillas
  • 4 tbsp sharp cheddar cheese
  • 4 slices fresh roasted turkey breast
  • 1/2 avocado
  • 2 tbsp fresh mild salsa

Directions

    1. Poach eggs in egg-poaching pan for 7 minutes.

    2. While eggs are cooking, spread 1 tbsp of beans over each tortilla. Top each with 2 tbsp of cheese and microwave on high for 20 seconds.

    3. Add 2 slices of turkey breast, then place 2 poached eggs on top of each tortilla. Top eggs with additional 1 tbsp cheese.

    4. Slice avocado into 6 slices and top each tortilla with 3 slices.

    5. Dress each tortilla with 1 tbsp of fresh salsa and serve.
