- 3 Tbsp. all-purpose flour
- 1/2 c. grated sharp Cheddar cheese
- 1 c. milk
- salt to taste
- cayenne pepper to taste
Directions

1Melt the butter in a small enameled iron saucepan or a double boiler.

2Add the flour and blend well.

3Add cheese and beat until smooth.

4Slowly add the milk, stirring constantly.

5Cook until the sauce is thick and perfectly smooth, approximately 4 minutes.

6Add salt and cayenne pepper.
