Three Cheese Lasagne Roll-Ups

  • 15 lasagne noodles
  • 2 c. each Ricotta and shredded Mozzarella
  • 1/2 c. grated Parmesan
  • 2 eggs, lightly beaten
  • 1 (10 oz.) frozen chopped spinach, thawed and drained
  • 1/4 tsp. pepper
  • 1/4 tsp. ground nutmeg
  • 26 to 32 oz. spaghetti sauce

Directions

    Cook lasagne according to package directions.

    Combine three cheeses with eggs, spinach, pepper and nutmeg.

    Spread thin layer of sauce in a 9 x 13-inch baking dish.

    Spread cheese mixture evenly on lasagne.

    Roll up and place seam side down in dish. Repeat.

    Cover with remaining sauce.

    Bake, covered, at 350° for 25 minutes, then, uncovered, for 5 minutes longer.
