Ingredients
- 3 Tbsp. peanut oil
- 1 tsp. salt
- 3/4 c. cooked shrimp
- 3/4 c. cooked pork, in 1/4-inch pieces
- 3/4 c. cooked chicken, in 1/4-inch pieces
- 1 large onion, finely diced
- 1 large stalk celery, finely diced
- 2 Tbsp. pimento, minced
- 2 eggs, lightly beaten
- 1/2 c. bean sprouts
- 1/2 c. cooked peas
- 6 c. rice, cooked and set aside to cool
- 5 Tbsp. soy sauce
- 3 Tbsp. green onions, minced
Directions

1Heat the wok.

2Add the oil.

3When the oil is hot, add the salt and stir in the shrimp, pork, onion and celery.

4Stir vigorously until the onion is just transparent.

5Stir in the pimento, just to mix, then add the eggs, stirring constantly.

6Add the bean sprouts and peas.

7Stir to mix well.

8Stir in the rice; continue stirring until the rice is thoroughly mixed with the other ingredients. Add the soy sauce, a little at a time, stirring after each addition.

9The soy sauce will give the rice a lovely light brown color.

10(Add more soy sauce if it is not salty enough, but more than 6 tablespoons of soy sauce will make most rice too soggy.) Stir in the minced green onions.

11Serve very hot.
