- 360 g dark chocolate
- 250 g butter, unsalted
- 4 eggs
- 295 g brown sugar
- 65 g glace ginger, chopped
- 1 14 teaspoons thyme, dried
- 75 g flour
- 1 teaspoon baking powder
- 14 teaspoon salt
- 100 g dark chocolate
- 30 g butter, unsalted
- 40 ml cream
Directions

1Line a 22cm square pan.

2Heat oven to 160C.

3Melt butter and half the chocolate, set aside to cool.

4Whisk eggs and sugar until thick and pale.

5Add melted chocolate mixture, finely chopped chocolate, ginger and thyme.

6Sift flour and baking powder and salt.

7Gently fold through the chocolate mix.

8Spoon cake mixture into the lined pan and bake for 1 hour and 10 minutes or until firm on top.

9Cool in pan.

10For the chocolate glaze, melt chocolate, butter and cream.

11Cool slightly until a spreadable consistency, then spread over the cake.

12Cut into squares.
