- 1/2 cup apple juice
- 1/2 teaspoon thyme dried
- 1 cup figs dried, chopped
- 1 1/4 cups flour, all-purpose
- 1/4 cup cornmeal
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 6 tablespoons vegetable oil
- 2 tablespoons sugar
- 1 each eggs
- 1/4 cup pine nuts toasted
Directions

1Combine the apple juice, thyme, and figs in a bowl.

2Set aside for 10 minutes.

3Stir together the flour, cornmeal, baking powder, and baking soda in a bowl.

4Beat the oil, sugar and egg until well blended.

5Pour the egg mixture into the flour.

6Add the pine nuts and fig mixture.

7Beat well.

8Pour the batter into an oiled and floured 9-inch round (or 8 inch square) baking pan.

9Bake in 350F (180C) F oven for 40 to 50 minutes.

10Cool for 5 minutes in the pan.

11Remove from pan and cool thoroughly.
