Thyme-Marinated Carrots

  • 2 lb. carrots, peeled and cut into 1/2-inch by 2-inch strips
  • 6 cloves garlic, peeled
  • 2 Tbs. balsamic vinegar
  • 1 1/2 Tbs. olive oil
  • 1 Tbs. chopped fresh thyme
  • 1/4 tsp. sugar
  • balsamic vinegar

    Blanch carrots and garlic in boiling salted water 1 minute.

    Drain.

    Toss carrots with remaining ingredients in large bowl.

    Season to taste with salt and pepper.

    Let stand 10 minutes.

    Remove garlic, and serve warm or at room temperature.
