- 5 tablespoons olive oil
- 4 tablespoons unsalted butter
- 2 lbs small onions
- 2 tablespoons chopped fresh thyme
- salt
- freshly ground black pepper
Directions

1Preheat oven to 425F degrees.

2Heat the oil and butter in large roasting dish.

3Remove outer skins off the onions but keep them whole.

4Add the onions to the dish and toss them in the oil and butter mixture over a medium heat until lightly sauteed.

5Add the thyme and seasoning and roast for 45-50 minutes, basting regularly.
