Ingredients

  • 3 lb chicken thighs
  • 1 packages of chorizo
  • 3 strips of bacon
  • 1/2 medium onion
  • 3 bay leaves
  • 1 small tomato
  • 2 tbsp vinegar
  • 1 small package of achiote
  • 1 salt and pepper to taste
  • 1 clove of garlic
  • 1 can chipotle chiles (I only use 2-3 chiles from the can)

    boil the chicken thighs with the garlic, onion and bay leaves until chicken is tender

    in a pan cook the strips of bacon.

    once cooked remove from the pan and cook the chorizo.

    shred the chicken, do not discard the water you cooked it in!

    place all of your ingredients, except the chicken, in a blender until you get a somewhat thick, reddish sauce.

    put the shredded chicken in a pot and dump the sauce over the chicken, stirring until all chicken is covered.

    bring to a boil.

    serve in tacos or in any way you prefer :)
