Ingredients

  • 1 c. each: raisins, chopped dried apricots, glace fruit and pecan halves
  • 1/2 c. chopped candied pineapple
  • 1/2 c. brandy
  • 1/3 c. each: butter and brown sugar
  • 1 egg
  • 1 tsp. grated lemon peel
  • 3/4 c. flour
  • 1/4 tsp. each: baking powder and salt
  • 1/4 c. glace cherries

Directions

    Marinate fruits and nuts in brandy for at least 2 hours. Cream butter and sugar; mix in egg and lemon peel.

    Stir in sifted dry ingredients.

    Fold in marinated fruits and nuts. Spoon into greased miniature muffin tins.

    Place cherry on each. Bake at 300° for 35 minutes.

    Drizzle each with brandy while warm, if desired.

    Wrap in airtight container.

    Store in cool place up to 2 months, adding more brandy each week.
