- 8 egg yolks
- 1/2 c. sugar
- 1 1/2 lb. Marscapone cheese
- 1 Tbsp. lemon rind
- 4 egg whites, beaten
- 2 c. brewed Espresso
- 1/4 c. rum or brandy (if desired)
- 4 pkg. ladyfingers
Directions

1Mix together egg yolks and sugar. Add Marscapone cheese and mix.

2Add lemon rind. Fold in egg whites.

3Separately combine Espresso and rum.

4Lightly toast ladyfingers. Dip ladyfingers into Espresso and cover bottom of baking pan.

5Cover with layer of cheese mixture.

6Continue to layer cheese mixture and coffee dipped ladyfingers. Cover and put in refrigerator overnight. Garnish with cocoa powder.
