  • 10 oz. extra-firm tofu
  • 1/4 cup nonfat mayonnaise
  • 2 tsp. Dijon-style mustard
  • 1/2 tsp. garlic powder
  • 3/4 cup diced celery
  • 3/4 cup diced green pepper
  • 1 small onion, diced
  • 1 Tbs. balsamic vinegar
  • 2 bagels, halved
  • 2 tomatoes, sliced, then sliced again into half-circles for garnish

Directions

    Drain and mash tofu.

    Mix it with mayonnaise, mustard, garlic powder, celery, green pepper, onion and vinegar.

    Spoon one-fourth of the mixture onto each bagel half.

    Surround with tomato slices, and serve.
