- 14 ounces silken tofu or 14 ounces soft tofu
- 1 cup extra virgin olive oil
- 34 cup lime juice
- 2 tablespoons Dijon mustard
- 1 tablespoon finely minced garlic
- 1 tablespoon finely minced shallot
- salt & pepper
Directions

1Using paper towels, blot excess water from tofu.

2Break up the tofu and put into food processor.

3Add remaining ingredients and blend till smooth.

4Refrigerate in a container with a tight lid.

5Stir or shake before serving.
