- 16 ounces drained tofu (i think any will do, i used soft) or 5 eggs
- 4 large burrito tortillas
- 1 tablespoon olive oil
- 1 tablespoon cumin
- 1 teaspoon chili powder
- 14 cup diced onion
- salsa
- shredded cheddar cheese
- lettuce
- sour cream
Directions

1if you're using eggs, skip steps 2& 3 and just scramble up the eggs- spices aren't really necessary.

2saute onions and olive oil and spices for approximately 5 minutes or until onions begin to soften.

3add tofu and fold together, cover for approximately 5-10 minutes stirring occasionally.

45-10min.

5warm tortillas in oven or microwave (this will take less than a minute).

6place spiced tofu (or eggs) on tortilla and add your toppings.

7fold and eat!
