- 12 oz. cubed tofu
- 4 oz. shredded Cheddar cheese
- 1 chopped onion
- 2 to 3 eggs
- 1/4 c. bread crumbs
- herbs to taste (example: 1/2 tsp. basil)
- 1 1/2 c. milk (soy or dairy)
- 2 Tbsp. melted butter
- uncooked pie shell
Directions

1Saute onion in butter.

2Combine all ingredients except bread crumbs and pie crust in bowl.

3Add herbs and vegetables.

4Pour into pie shell.

5Top with bread crumbs.

6Bake 15 minutes at 400°, then 30 minutes at 325°.
