Tomatillo Salsa

  • 1 c. jusked, diced tomatillos
  • 1/4 c. diced sweet red pepper
  • 1/4 c. diced sweet yellow pepper
  • 1/4 c. diced onion
  • 2 Tbsp. white wine vinegar
  • 1 Tbsp. sugar
  • 1 Tbsp. unsweetened orange juice
  • 1 Tbsp. lime juice
  • 1 Tbsp. lemon juice
  • 2 tsp. chopped fresh cilantro
  • 1/2 tsp. ground cumin
  • 1/4 tsp. ground red pepper

Directions

    Combine diced tomatillos, sweet red pepper, yellow pepper and onion in a large glass bowl.

    Stir well. Add vinegar, sugar and juices; stir well to combine.

    Stir in cilantro, cumin and red pepper. Stir well again to combine. Cover and refrigerate for at least 2 hours.

    Serve salsa with unsalted tortilla chips, beef, pork or chicken.
