- 9 inches unbaked pie shells
- 1 cup gruyere cheese
- 3 ripe sliced tomatoes
- fresh big leaf basil
- 1/4 teaspoon ground black pepper (optional)
- 4 eggs
- 1/2 cup light cream
- 1 tablespoon Dijon mustard
Directions

1Spread Mustard in the bottom of the Pie crust.

2Place fresh Basil over mustard enough to cover bottom

3Spread slices of Gruyere cheese over Basil.

4Spread Tomatoes over Cheese.

5In a separate bowel beat eggs and cream, then pour over tomatoes.

6Add pepper to taste.

7Bake at 350-375 for 45mins or until eggs and crust look done

8Let rest 15 mins before cutting.
