Ingredients

  • 1 medium onion, chopped
  • 1 large garlic clove, minced
  • 1 tablespoon butter
  • 32 ounces tomatoes
  • 1 bay leaf
  • 1 tablespoon sugar
  • 4 ounces cream cheese
  • 1 cup half-and-half
  • salt and pepper
  • 1 teaspoon lemon juice
  • 1 tablespoon fresh basil, minced

Directions

    Saute onion & garlic in the butter until soft.

    Reserve about 1/2 C of the tomatoes &.

    Add the rest of the tomatoes, bay leaf, & sugar to the pan.

    Simmer for 10 min,.

    Puree 1/2 C of tomatoes with cream cheese in a blender.

    Mix the puree with the tomatoes in the pan after the 10 minute simmer.

    Add the 1/2 & 1/2, then the lemon juice.

    Season with salt & pepper to taste.

    Garnish with fresh, minced basil.
