Ingredients

  • 28-32 oz. can whole tomatoes with juice, chopped
  • 1 large onion, chopped
  • Zest of 1 lemon, minced
  • 1/2 c. sugar
  • 1/2 c. cider vinegar
  • 1/3 c. dried currants
  • 1 1/2 tsp. mustard seeds
  • 1/2 tsp. salt
  • 1/4 tsp. cayenne
  • 1/4 tsp. allspice
  • 1/4 tsp. cinnamon

Directions

    Combine all ingredients in saucepan.

    Cook over moderate heat for 30 minutes, stirring occasionally.

    Reduce heat to low and simmer an additional 30 minutes, stirring occasionally, until thickened and reduced to about 2 1/2 cups. May keep chilled and covered 3 months.
