Tomato Chutney

  • 5 lb. tomatoes (red or yellow)
  • 2 lb. sugar
  • 1/2 tsp. salt
  • 1 orange, thinly sliced
  • 1 lemon, thinly sliced
  • 1 stick (3-inch) cinnamon
  • 1 piece whole ginger
  • 2 c. seedless raisins
  • 1/2 c. lemon juice
  • 1/4 tsp. Tabasco

    Stir over heat until sugar dissolves. Add

    Bring to a boil; cook over low

    heat until thick, about 1 hour, stirring occasionally.

    Remove cinnamon and ginger.

    Stir in Tabasco; pour into hot pint or half-pint jars and seal at once.
