  • 1/2 gal. tomatoes, cooked down to 2 c. puree
  • 1 1/2 c. fine cracker crumbs
  • 2 Tbsp. minced onions
  • 1 1/2 tsp. sugar
  • 1 Tbsp. flour
  • 1/2 tsp. salt
  • pepper to taste
  • 3 eggs
  • 3 Tbsp. butter

    all ingredients, except butter. Beat eggs well and add to mixture.

    butter in skillet and drop in fritters by the spoonful.
