Tomato Garlic Crostini

- 4 tablespoons extra-virgin olive oil
- 4 garlic cloves minced
- 2 plum tomatoes chopped
- 1 teaspoon sugar
- 1 teaspoon thyme
- kosher salt to taste
- 8 slices baguette cut diagonally into 1/4 inch
- peppercorn to taste
- 3 parsley leaves chopped
- 1 teaspoon white wine vinegar
Directions

1In a mixing bowl add chopped tomatoes , vinegar ,sugar ,thyme and parsley .Mix well.Season with salt and pepper.

2Heat 2 tablespoon olive oil in a pan and add garlic.Stir and cook until a little burnt or brown in color. Remove garlic from oil and add another 2 tablespoon of oil in the pan.

3Arrange slices of bread on the pan and toast them till nice golden and crispy.

4Top the toasted bread with the tomato garlic mixture. Serve immediately.
