- 8 slices sourdough bread, toasted
- 2 1/2 lb. large tomatoes
- 1/2 tsp. minced garlic
- 1/4 c. snipped fresh chives
- 1/2 tsp. salt
- ground pepper to taste
- 4 oz. Cheddar cheese
- 1 Tbsp. olive oil
- 2 1/2 Tbsp. grated Parmesan cheese
Directions

1Heat oven to 350°.

2Spray a shallow 2-quart baking dish with cooking spray.

3Arrange 4 slices of bread over bottom of baking dish, tearing to fit.

4Top with half of the tomato slices.

5Spread garlic over tomatoes, then sprinkle with half the chives.

6Season with salt and pepper.

7Crumble Cheddar cheese over chives and drizzle with half the oil.

8Top with remaining bread slices, pressing firmly to fit.

9Arrange remaining tomato slices on top, then sprinkle with remaining chives, Parmesan cheese and additional pepper to taste.

10Drizzle with remaining 1 1/2 teaspoons oil.

11(If making ahead, cover and refrigerate, then proceed.)

12Bake for 40 to 45 minutes, or until cheese on top is golden and tomatoes are soft. Serve immediately.
