Ingredients
- 1 lb bacon
- 2 tablespoons bacon drippings
- 2 tablespoons all-purpose flour
- 3 cups tomatoes, peeled, chopped with juice reserved
- salt, to taste
- ground pepper, to taste
Directions

1Cook the bacon in a skillet or iron pan until done.

2Remove bacon and drain excess drippings from pan.

3Break up several pieces of bacon and drop into pan.

4Place remaining bacon on a serving platter for the breakfast table.

5Sprinkle flour into the drippings and stir until it is bubbly and brown.

6This takes about one minute.

7Add the chopped tomatoes and juice and simmer until thickened.

8This will take about ten minutes if you use fresh tomatoes and five minutes for canned.

9You may season with salt and pepper to taste.

10Serve over hot grits or biscuits.
