Ingredients
- 1/4 c. onion, chopped (optional)
- 3 Tbsp. bacon drippings
- 1 Tbsp. flour
- 3 or 4 fresh tomatoes, peeled and chopped or 1 can tomatoes
- 1 c. water
- salt and pepper to taste
Directions

1Saute onion in bacon fat.

2Add flour and brown.

3Add tomatoes and their juices.

4Stir as gravy thickens.

5Add water, a little at a time, and cook longer until gravy is of desired consistency. Add salt and pepper to taste.

6Serve over rice or biscuits.

7This gravy is also good as a casserole sauce.
