Tomato Gravy

Ingredients

  • 1/4 c. onion, chopped (optional)
  • 3 Tbsp. bacon drippings
  • 1 Tbsp. flour
  • 3 or 4 fresh tomatoes, peeled and chopped or 1 can tomatoes
  • 1 c. water
  • salt and pepper to taste

Directions

    Saute onion in bacon fat.

    Add flour and brown.
  3. 3
    Add tomatoes and their juices.
  4. 4
    Stir as gravy thickens.

    Add water, a little at a time, and cook longer until gravy is of desired consistency. Add salt and pepper to taste.

    Serve over rice or biscuits.

    This gravy is also good as a casserole sauce.
