  • 1 Tbsp. extra virgin olive oil
  • 1 Tbsp. balsamic vinegar
  • 1/2 tsp. sugar
  • 1/4 tsp. dried oregano leaves
  • 4 oz. firm or extra firm lite silken tofu, chopped
  • 3 large black olives, sliced
  • 1 medium tomato, chopped
  • 1 cup fresh chopped spinach leaves

  • 8 fl oz (1 cup) fat-free milk

Directions

    Mix oil, vinegar, sugar and oregano in a bowl.

    Season as desired with your favorite salt-free seasoning.

    Add tofu, olives and tomatoes to dressing mixture; toss gently.

    Place on top of spinach.
