- 2 large tomatoes, sliced
- 2 medium zucchini, sliced
- 1 large onion, thinly sliced
- 1 Tbsp. chopped, fresh basil or 1 tsp. dried basil, crumbled
- 1 Tbsp. chopped, fresh oregano or 1 tsp. dried oregano
- 6 Tbsp. olive oil
- 3 Tbsp. balsamic vinegar or 2 Tbsp. red wine vinegar
- salt and pepper
Directions

1Place alternating slices of tomatoes, zucchini and onion on serving platter.

2Sprinkle with herbs.

3Whisk together oil and vinegar and pour over salad.

5Cover and refrigerate 2 hours, but not more than 4 hours.
