- 2 eggs
- 1 cup granulated sugar
- 1/4 cup cooking oil
- 1 teaspoon vanilla
- 4 cups all purpose flour
- 4 teaspoons baking powder
- 3/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1 cup buttermilk
- cooking oil for deep frying
- powdered sugar
Directions

1Beat eggs until thick and lemon-colored. Add the sugar and beat until smooth. Stir in 1/4 cup cooking oil and vanilla.

2Thoroughly combine dry ingredients. Add to egg mixture alternately with buttermilk. Turn out on lightly floured surface and roll to 1/2 inch thickness. Cut with floured doughnut cutter.

3Fry in deep hot oil (375 degrees) until golden brown, about 3 minutes, turning once. Drain on paper toweling. Serve plain or sprinkled with powdered ugar. Yield: 24 doughnuts.
