  • 1 9 Unbaked Pie Crust
  • 5 Large Ripe Tomatoes, Peeled, Seeded And Sliced
  • 3 Thinly Sliced Green Onions
  • 1/4 Cup Chiffanade Of Fresh Basil Or 1 Tbls. Dried Basil
  • 1/2 Tsp. Salt 1/2 Tsp. Pepper
  • 1 Cup Mayonnaise (lite Mayo Maybe Substituted)
  • 2 Cups Shredded Cheddar Cheese Or Cheese

Directions

    Pre heat oven to 375 degrees.

    Bake pie crust for 10 minutes using pie weights, dried beans or rice.

    Place tomato slices on layers of paper toweling, pat as dry as possible.

    Cover bottom of pie crust with a layer of tomato slices.
  5. 5
    Sprinkle salt, pepper, green onion and basil over tomato slices.

    Layer remaining tomato slices in pie crust sprinkling onion, basil, salt & pepper between each layer.

    In a medium bowl, mix together mayonnaise and cheese.

    Spread mixture evenly over top of pie.

    Reduce oven to 350 degrees F. Bake pie for appox.

    Tip: Choose the most fragrant, fresh-picked tomatoes you can find.

    But be sure to drain the slices well on paper towels.

    The real secret is to get the tomatoes as dry as possible.

    Otherwise it can be a little watery.

    If you make your own pie crust, try stirring in a teaspoon of dried basil with the flour.
